辣酱烤鸡 Ayam Goreng Percik Berkuah

┃材料┃
A: 鸡全腿2只、黄姜粉½茶匙、盐1茶匙
B: 亚叁皮 1片、香茅2枝(拍烂)、椰浆头200毫升、白糖2汤匙、盐适量
┃研磨香料┃
葱头6-8粒、蒜头4瓣、姜1寸、辣椒干15条(浸泡)
┃做法┃
1. 用黄姜粉和盐腌鸡腿肉。(图1)
2. 起锅热油,把鸡腿肉炸至微金黄色,盛出。(图2)
3. 留约5-6汤匙炸油在锅里,把研磨香料和香茅一起炒至出味。(图3-4)
4. 然后加入材料B和鸡腿肉,继续焖煮至肉软即可。(图5-8)

┃INGREDIENT┃
A: 2 pcs whole chicken legs, ½ tsp turmeric powder, 1 tsp salt
B: 1 pc assam keping, 2 stalks lemon grass(bruised), 200 ml thick coconut milk, 2 tbsps sugar or to taste, salt to taste
┃SPICE PASTE┃
6 – 8 shallots, 4 cloves garlic, 1 inch ginger, 15 stalks dried chilly (soaked)
┃METHOD┃
1. Marinate the chicken whole leg with the turmeric powder & salt. (pic 1)
2. Heat oil & deep fry the chicken leg just to brown it, remove.(pic 2)
3. Remove all of the oil, leaving about 5-6 Tbsps cooking oil left in the pan, sauté the spice paste with the bruised lemongrass until fragrant. (pic 3-4)
4. Then add ingredients B & chicken, continue to cook till chicken is thoroughly cooked. (pic 5-8)
