炒芋头丸子 Stir Fried Yam Ball

【材料】
芋头350克、芡粉2汤匙、糯米粉2汤匙、白油25克、盐1⁄2茶匙、糖1⁄2茶匙
【调味料】
蚝油1汤匙、生抽2汤匙、鸡精粉1茶匙、胡椒粉少许、麻油少许
【配料】
肉碎100克、香菇2朵(浸软切丝)、芹菜1棵(切段)、蒜蓉1汤匙
【做法】
1. 芋头去皮切片蒸熟,取出趁热压成泥,然后加入其余材料搓成面团。(图1-2)
2. 将芋团搓成一小粒丸子后,放入沸水中煮熟至浮起,捞出浸入冷水中片刻备用。(图3-4)
3. 烧热3汤匙油爆香蒜蓉、香菇,并加入肉碎炒散。(图5-6)
4. 加入调味料炒香,倒入1⁄2杯水及芋头丸子,焖煮至滚。(图7-8)
5. 加入芹菜拌一拌即可。

【Ingredients】
350g yam, 2 tbsp starch, 2 tbsp glutinous rice flour, 25g shortening, 1⁄2 tsp salt, 1⁄2 tsp sugar
【Seasoning】
1 tbsp oyster sauce, 2 tbsp soy sauce, 1 tsp chicken powder, dash of pepper and sesame oil
【Sub-ingredients】
100g minced meat, 2 pcs Chinese mushroom (soaked and julienne), 1 stalk Chinese celery (cut sections), 1 tbsp. chopped garlic
【Method】
1. Peel yam, cut slices and steam until cooked; mash it whist hot and then add in other ingredients and knead into dough. (pic 1-2)
2. Make dough into small balls and then scud in boiling water until afloat; soak in cold water and set aside. (pic 3-4)
3. Heat 3 tbsp oil in wok, saute garlic and Chinese mushroom until fragrant; add in minced meat and stir-fry until loosen. (pic 5-6)
4. Toss in seasoning, 1⁄2 cup of water and yam balls, simmer until boiled. (pic 7-8)
5. Add in Chinese celery and dish out.
