材料:
普通面粉2杯、墨鱼2只(洗净切丝)、清水2杯、鸡蛋3粒、青葱1束(切段)、红罗卜1条(切丝)、红辣椒1条(切丝)、食油适量、盐和胡椒粉适量
蘸酱:全部混合
酱油1/4杯、白醋1/2汤匙、青葱1棵(切粒)、蒜头1瓣(剁碎)、韩国辣椒粉1/2茶匙(随意)、白糖1/2茶匙、麻油1茶匙
做法:
1.把面粉、鸡蛋及清水混合成糊,视情况加水或粉。
2.加入盐和胡椒粉调味,放置10-15分钟醒面。
3.热平底锅,沾少许油。倒入3/4杯的面糊,把平底锅铺满。(图1)
4.面上撒少许青葱段、红罗卜丝、红辣椒丝及墨鱼,再铺上一层面糊鸡蛋。(图2-5)
5.将面皮煎6-8分钟至底部转黄后,翻面再煎6-8分钟至黄,用锅铲把材料压平。
6.重复步骤至面糊用完,吃时把煎饼切成八份,沾醺酱吃。(图6)
INGREDIENTS:
2 cups flour (all purpose), 2 squid (wash and jullienne), 2 cups water, 3 eggs, 1 bunch of spring onions (cut into block), 1 carrot (julienne), 1 red chilli (julienne), vegetable oil, salt and pepper to taste
DIPPING SAUCE INGREDIENTS:combine all
1/4 cup soy sauce, 1/2 tbsp vinegar (distilled white), 1 stalk spring onion (chopped), 1 clover garlic (chopped), 1/2 tbsp Korean dried chili flakes (optional), 1/2 tsp sugar, 1 tsp sesame oil
METHOD:
1.In a large bowl, mix flours and water till smooth. Add more flour or water if needed to get the consistency of a thin pancake batter.
2.Stir in salt and pepper. Let set for about 10-15 minutes.
3.Heat a skillet over medium flame with a little oil. Pour about 3/4 cup batter into the skillet, tilting the pan to cover the bottom. (pic 1)
4.Sprinkle spring onions, red chilli, carrot, squid and egg on top, let saute for 6-8 minutes until the bottom is lightly browned. (pic 2-5)
5.Flip and brown the other side and cook for another 6-8 minutes. Repeat steps with the rest of the batter.
6.W hen ready to serve, cut the pancake into 8 pieces resembling a pizza pie. (pic 6)
