香蕉桃子蛋糕 Banana&Peaches Cake

【材料】
Mazola粟米油125毫升、A蛋2粒、原味酸乳酪65克、黄糖75克、盐1⁄2茶匙、香草香精1茶匙、捣烂香蕉215克(用
2至3条香蕉)、面粉290克、苏打粉1茶匙、月桂粉1⁄2茶匙、罐头桃2片(切粒)
【顶料】
香蕉2条(切半)、杏仁片少许、粗糖少许
8×4烤盘(涂油、撒少许粉)
【做法】
1.把鸡蛋、Mazola混合食油、优乳酪、糖、盐及香草香精放入搅拌缸内以低速搅拌好,加入香蕉泥拌匀。(图1-2)
2.加入筛过的粉料及月桂粉,搅拌均匀后加入桃粒。(图3-4)
3.将蛋糕糊料倒入烤盘内,铺上香蕉、杏仁片及粗糖,放入预热180℃的烤炉内烤45-55分钟或至蛋糕转金黄色。可以插入竹签以测试蛋糕熟度。(图5-8)
4.将蛋糕放置冷却约15分钟后取出,趁温享用。

【Ingredients】
125 ml Mazola Corn Oil, 2 “Grade A”eggs, 65g plain yogurt, 75 g light brown sugar, 1⁄2 tsp salt, 1 tsp vanilla extract, 215 g mashed ripe bananas (2 large or 3 small ripe bananas), 290 g plain flour(sifted), 1 tsp baking powder (sifted), 1⁄2 tsp cinnamon powder, 2 pcs peaches(cubed)
【Topping】
2 bananas (sliced), some almond flakes, 1 tbsp coarse sugar
8 x 4 inches loaf pan(greased & floured with extra flour)
【Method】
1.In a large bowl, combine the eggs, Mazola Corn Oil, yoghurt, sugar, salt, vanilla and whisk to combine. Stir in bananas.(pic 1-2)
2.Add the sifted flour, baking powder, baking soda, cinnamon powder and stir to just incorporate. Stir in peaches.(pic 3-4)
3.Pour batter into prepared pan, top with 2 slices of banana, almond flakes & sugar; bake for about 45- 55 minutes, or until top is golden and set, a toothpick inserted in the center comes out mostly clean. (pic 5-8)
4.Allow cake to cool in pan for about 15 minutes before removing. Serve cake warm.
