    小贴士:可以用去骨鸡肉代替猪肉。

    Step 1

    用腌料腌肉至少二小时,加入打散的鸡蛋拌均。把粘米粉、生粉、盐和糖混合,然后用来沾猪肉。Marinate pork cubes with condiments for at least 2 hours.Add in beaten egg to mix thoroughly. Combine rice flour, tapioca flour, salt and pepper together in a bowl. Add in marinated pork to coat the pieces.

    Step 2

    起锅热油,把蒜头片和辣椒干爆香,然后置放一旁。用剩余的油把猪肉爆香酥。Heat oil in a wok, deep-fry garlic and dried chillies until fragrant. Dish out and put aside. With remaining hot oil, put in marinated pork cubes and fry until crispy and golden.

    Step 3

    在另一个干净的锅里热1汤匙油和1茶匙麻油,撒入花雕酒,倒入调味料及指天椒,煮至滚。把香酥猪肉、蒜头片、辣椒干及青葱加入,拌均后即可上桌。Heat 1tbsp oil and 1tsp sesame oil in a clean wok. Splash in Shao Hsing Hua Tiau wine.Add seasoning, chilli padi and bring to boil. Put in pre-fried pork crispies, fried garlic, dried chillies and spring onion. Toss to combine. Dish out and serve immediately.
