鱼虾蟹炒饭 Seafood Fried Rice

【材料】
新鲜鱼肉100克、虾肉100克、急冻蟹肉100克(挤乾水份)、干贝3粒(加水蒸软分散炸香)、银鱼仔
20克(炸香)、鸡蛋2粒(打散)、冷饭3碗、蒜茸1汤匙、姜茸1茶匙、食油3汤匙、麻油1茶匙、青葱
粒3汤匙
【调味料】
鸡精粉1茶匙、生抽1汤匙、盐1⁄2茶匙、胡椒粉1⁄4茶匙、麻油1茶匙
【做法】
1. 预先把冷饭弄松散,淋入蛋液拌匀让冷饭吸收蛋汁及均匀裹上蛋液备用。(图1)
2. 将鱼肉及虾肉切丁,过油,捞出沥油,备用。(图2-3)
3. 烧热3汤匙油及1茶匙麻油,爆香蒜茸及姜茸,加入冷饭,炒至松散及乾身。(图5-6)
4. 倒入调味料炒匀,并加入海鲜和青葱翻炒,盛起。(图7-8)
5. 面上撒入干贝松、银鱼仔、青葱粒便可。

【Ingredients】
100g fish meat, 100g prawn, 100g frozen crabmeat, 3 soften & fried dried scallop (juliennes),
20g toasted sliver anchovy, 2 eggs (beaten), 3bowls cold white rice, 1 tbsp chopped garlic, 1 tsp
chopped ginger, 3tbsp oil, 1 tsp sesami oil, 3 tbsp chopped spring onion
【Seasoning】
1 tsp chicken powder, 1 tbsp soy sauce, 1⁄2 tsp salt, 1⁄4 tsp pepper, 1 tsp sesame oil
【Method】
1. Loosen the white rice and coat with egg sauce. (pic 1)
2. Dice fish and prawn meat; blanch in hot oil briskly, drain.(pic 2-3)
3. Heat 3 tbsp oil and 1 tsp sesame oil in wok, sauté garlic and ginger until fragrant, toss in
white rice and stir-fry until loosens.(pic 5-6)
4. Toss in seasoning, seafood and spring onion and then dish out.(pic 7-8)
5. Sprinkle dried scallop, silver anchovy and spring onion on top to serve.
