豉香梅菜蒸肉排 Steamed Pork Ribs with Mei Chai

【材料】
咸梅菜干50克、肉排500克、蒜头3瓣、红辣椒1条、姜1公分、葱1⁄2棵、芹菜梗少许、粟粉水勾芡
【调味料】
豆豉1汤匙、黑酱油2滴、酱油1⁄2茶匙、糖1⁄2茶匙
【做法】
1. 梅菜氽烫洗净;泡烧水一小时以减低咸味;剁碎备用。(图1)
2. 青葱,芹菜梗和红辣椒洗净后切细备用;蒜头和姜也剁细。(图2)
3. 肉排切两寸长块,氽烫以去血水后洗净,排在蒸盘中。(图3-4)
4. 起油锅爆香姜茸和蒜茸;再把甜梅菜芯,青葱,芹菜梗和红辣椒以大火炒香。
5. 倒入半小饭碗的清水或清汤煮开;再用以上调味料调好味道勾芡。
6. 把梅菜酱汁倒在肉排上,放入蒸笼,用大火蒸15分钟即可取出;撒上葱花享用。(图5-6)

【Ingredients】
50g dried salted Mei Chai, 500g pork ribs, 1 tbsp chopped garlic, 1 red chili, 1cm ginger, 1⁄2 stalk spring
onion (cut into blocks), some Chinese celery stems
【Seasoning】
1 tbsp fermented soy bean, 2 drops dark soy sauce, 1⁄2 tsp soy sauce, 1⁄2 tsp sugar, corn starch for thick-
ening
【Method】
1. Wash and blanch Mei Chai , soak in hot water for 1 hour, and then chopped coarsely.
2. Wash and chop spring onion and Chinese celery; chopped the ginger and garlic. (pic 2)
3. Cut pork ribs into 2 inches long, blanch in boiling water and rinse, arrange on steam plate.(pic 3-4)
4. Heat oil in wok, sauté garlic and ginger until fragrant, toss in other ingredients.
5. Pour in half bowl stock with seasoning, bring to boil , thicken and pour over the ribs.
6. Steam the ribs in high heat for 15 minutes, sprinkle chopped spring onion on top before serving.(pic
