    怪味鸡,又叫秧盆鸡,是中国四川省和重庆市常见的特色传统名菜。

    Step 1

    将腌鸡卷材料混合,将腌好的鸡卷成鸡卷,腌制24小时,然后蒸15分钟至熟后浸泡在冷水里至100%冷却,待用。Mix marinade and wrap with chicken rolls for approximately 24 hours. Steam for approximately 15 minutes until cooked. Soak into ice water until whole chicken rolls are 100% cooled.

    Step 2

    将香辣青葱酱材料放进搅拌机搅至幼细,放进冰箱20分钟备用。Mix well all ingredients for green chilli vinaigrette and blend until smooth, and allow to infuse for 20 minutes in chiller.

    Step 3

    将香辣美乃滋混合放进搅拌机搅拌至幼滑,放进冰箱20分钟备用。Place creamy salted black bean sauce, in blender, blend until smooth, pour in protein and add in garnishing ingredients and marinate for 2 hours.

    Step 4

    将蒸好的鸡卷切好,配上香辣青葱酱和香辣美乃滋即可食用。Cut chicken rolls in pieces and place onto plate, serve with green chilli vinaigrette or spicy mayo on top of chicken rolls.
