黑白芝麻虾饼Black and White Prawn Cake

【材料】
虾胶300克、马蹄2粒(去皮拍碎)、白芝麻1⁄2小碗、黑芝麻1⁄2小碗、腐皮1张

【调味料】
味精1茶匙、盐1⁄2茶匙、胡椒粉1⁄4茶匙、蛋白1粒、栗粉1汤匙

【面糊】(混合)
面粉2汤匙、粟粉1汤匙、鸡蛋1粒

【做法】
1.将虾胶加入调味料拌匀、挞至起胶。(图1)
2.加入马蹄碎混合均匀,把虾胶馅分成2份。(图2)
3.摊开腐皮以湿布抹软,然后涂抹虾胶馅摺起,搽上面糊沾上白芝麻,另一份沾上黑芝麻。(图3)
4.以温油中火炸至呈现微黄即可,捞出沥油,切片上碟。(图4)

【Ingredients】
300g prawn paste, 2 water chestnut (peel & smashed), 1/2 bowl each of white & black sesame seed, 1 sheet bean curd skin

【Seasoning】
1 tsp MSG, 1/2 tsp salt, 1/4 tsp pepper, 1 egg white, 1 tbsp corn flour

【Batter】(Mix Well)
2 tbsp plain flour, 1 tbsp corn flour, 1 egg

【Method】
1.Marinate prawn paste with seasoning and blend until springy.(pic 1)
2.Add in water chestnut and divide them into 2 portions.(pic 2)
3.Flatten bean curd skin and mop with wet cloth until soften; spread prawn paste mixture on top and wrap up; seal with batter and coat one of them with white sesame seed while the other coat with black sesame seed.(pic 3)
4.Deep fry in warm oil until slightly brown and drain. Slice to serve.(pic 4)
