沙巴生肉面SABAH PORK NOODLE

【材料】
黄面条350克、瘦肉200克(切片)、蔬菜80克、红萝卜15克(切片)、猪油及猪油渣适量

【汤底】
猪大骨1公斤、清水2公升

【调味料】
盐2茶匙、味精½茶匙、胡椒粉少许

【做法】
1.猪大骨川烫,洗净,与清水慢火熬煮2小时,加入调味料即成汤底。(图1-2)
2.瘦肉切片,以2茶匙粟粉拌匀备用。(图3-4)
3.煮滚半锅清水,放入黄面条川烫后,放入碗中,滴入少许猪油拌一拌,备用。(图5)
4.将高汤煮滚,放入瘦肉片煮熟,加入蔬菜及红萝卜片略滚后,便可淋入黄面条上。(图6-7)
5.撒入少许胡椒粉,即可烹用 。

【INGREDIENTS】
350g yellow noodle, 200g lean meat, 80g vegetable, 15g carrot (sliced), some pork lard and crispy pork lard

【SOUP BASE】
1kg pig bones, 2 liter water

【SEASONING FOR SOUP】
2 tsp salt, ½ tsp MSG, dash of chicken powder

【METHOD】
1.Blanch bones and wash; boil with water by simmering in low heat for 2 hours, add in seasoning and use as soup base. (pic 1-2)
2.Slice meat and marinate with 2 tsp corn flour. (pic 3-4)
3.Boil half pot of water, scald noodles until soften; put in serving bowl and drizzle with some pork lard.(pic 5)
4.Bring soup base to boil, add in meat slices, follow with vegetable and carrot slices; once boiled, pour over noodle. (pic 6-7)
5.Sprinkle dash of pepper and serve.
