七彩玲珑鸡Smoked Rainbow Chicken

材料:
鸡腿2只
Mccormick肉桂粉1/4茶匙、Mccormick蒜粉1茶匙、
Mccormick洋葱粉1汤匙、盐1茶匙、黑胡椒适量
Bertolli Classic Pure olive oil 1汤匙
Bertolli Extra Light olive oil 1汤匙
鸡肉淋酱:
橙3粒、橙汁200毫升、酸梅酱2汤匙、糖2汤匙、橙皮3粒
烟熏材料:
糖2汤匙、面粉1汤匙、八角2粒、麦芽糖1汤匙
配料:(全部切丝)
芒果丝、梨丝、大辣椒丝、生菜丝、紫包菜丝、萝卜丝、香菜丝
做法:
1.鸡腿加入腌料腌制,用保鲜膜封好,收入冰箱冷藏3个小时-腌隔天味道更好
2.平底锅热油,放入鸡腿煎至两面金黄,捞起滴干油,铺放在铝箔盘子上。
3.在一个铝箔小碗内,将烟熏料里的面粉、糖和八角混合,放在镬里,盖上以大火煮5分钟至出烟。
4.开盖,放入蒸架,再放入鸡肉。
5.麦芽糖加点水混合,涂抹鸡肉。
6.盖上,小火熏制12分钟至鸡肉转色。
7.酱汁做法:将2粒橙去皮取肉。将橙皮加1碗水煮至滚后,再加400毫升的水和酸梅酱,煮至浓稠,离火。橙酱冷却后加入橙汁拌匀,备用。
8.将鸡肉切片,铺在盘子上,再排入切成丝的配料,淋上酱汁,再撒入少许胡椒粉,即可享用。
Ingredients:
2 chicken leg, ¼ tsp Mccormick Cinnamon Powder, 1 tsp Mccormick Garlic Powder, 1 tbsp Mccormick Onion Powder, 1 tsp salt, dash of black pepper, 1 tbsp Bertolli Classic Pure olive oil, 1 tbsp Bertoli Extra Light olive oil
Sauce:
3 orange, 200ml ornge juice, 2 tbsp plum sauce, 2 tbsp sugar, 3 orange zest
Smoke Ingredients:
2 tbsp sugar, 1 tbsp plain flour, 2 star anise,1 tbsp maltose
Sub-ingredients:(shredded all)
Mango, pear, red capsicum, lettuce, Purple cabbage, carrot, coriander leaves
Method:
1.Marinated chicken with marinate ingredients, cover with cling wrap, keep into fridge for 3 hours or overnight.
2.Heat some oil in pan, fry the chicken leg till golden brown, arrange on a disposable aluminium plate.
3.Mix plain flour, sugar and star anise in a small disposable aluminum cup, then put inside the wok, cover the lid, cook for 5 minutes till a lot smoke come out.
4.Open the lid, put a tray at the centre of the wok, top with chicken.
5.Mix maltose with some water, wrap on the surface of chicken.
6.Cover the lid, hot smoke the chicken until smokey-brown colored and cooked through, about 12 minutes.
7.To prepare sauce:Peel 2 orange, use the orange skin cook together with one bowl of water, bring to a boil. Add another bowl of water and plum sauce, cook until sauce thicken, remove the heat. Mix the sauce with orange juice, set aside.
8.Slice the chicken, arrange on serving plate, serve together with shredded fruits and vegetables, pour over the sauce, done.
