柠檬炒饭Fried Lemon Rice

【材料】
印度长粘米300克、盐适量、滚水适量

【配料】
食油2-3汤匙、腰豆1/4杯、白油1汤匙、菜籽1茶匙、小扁豆2茶匙、开瓣黄豆1 1/2汤匙(浸泡热水至少30 分钟)、咖哩叶2束、辣椒干3条(剪段)、青辣椒2条(切片)、黄姜粉1 1/2、柠檬汁2 汤匙或适量

【做法】
1.将米洗净。煮滚一大锅水,加盐后倒入米,以大火煮滚,不要加盖,煮时确保水分充足,让饭可以在锅里移动,待米熟后倒入筲箕滴干水。
2.起锅热食油,把腰豆以慢火炒至金黄色后放在纸巾上吸干油。
3.用同一个锅,加入白油、菜籽、小扁豆、开瓣黄豆及咖喱叶,炒至金黄色后加入青、红辣椒,再炒数秒钟。(图1-3)
4.加入黄姜粉,转小火炒30秒。(图4)
5.拌入煮熟的长粘米饭和豆类,搅拌均匀后加入盐和柠檬汁即可。(图 5-7)

【厨师叮咛】开瓣黄豆通常没有经过浸泡, 因此炒过后会很硬,最好先浸泡一会,抹干后用。

【Ingredients】
300 g basmati rice, salt to taste, boiling water

【Sub ingredients】
2 -3 tbsps cooking oil, 1/4 cup cashew nuts or peanuts, 1 tbsp ghee, 1 tsp mustard seeds, 2 tsps urad dhall, 1 1/2 tbsp channa dhall(soaked in hot water for 30 minutes-1 hour), 2 sprigs curry leaves, 3 dried red chillies (cut into 2cm lengths), 2 green chillies (sliced), 1 1/2 tsps ground turmeric powder, 2 tbsps lemon juice or to taste

【Method】
1.Wash rice well. Bring a large pan of water to boil and add required amount of salt. Add rice and cook by keeping the lid open until done. Make sure there is lot of water for the rice to move around and take
care not to overcook. Orain rice in a large colander.
2.ln a wok, add oil, fry cashew nuts or peanuts until golden. Remove & drain on kitchen paper. ln the same oil, add the ghee follow by the mustard seeds.
3.Add urad dhall, channa dhall and fry till golden. Add both the chillies and curry leaves, saute for few seconds. (pic 1-3)
4.Add turmeric powder, saute for 30 seconds on low-medium heat. (pic 4)
5.Toss in cooked basmathi rice, fried nuts and mix well. Season to taste with salt & lemon juice before transferring to a pot, until needed.(pic 5-8)

【Chef note】Channa dhall is normally added without soaking and is hard when fried dry. To avoid the hard bite, it can be soaked for sometime, drained and then pat dried before using.
