印度式马铃薯咖喱 Aloo Dum Indian Style Potatoes

【材料】
马铃薯12粒、食油8-10汤匙、大葱3粒(切片)、番茄2粒(搅拌成茸)、原味优葛180克、盐适量、
发起鲜奶油180克(随意)
【研磨香料】
辣椒干6-8条(剪小段,浸热水至软)、姜2.5公分、小茴香2茶匙、莞荽粉4汤匙、黄姜粉1茶匙、辣
椒粉3⁄4茶匙、印度混合香料1茶匙
【做法】
1. 把马铃薯连皮煮软后待凉时去皮备用。
2. 用电动研磨器把所有香料研磨至细。(图1-2)
3. 另外也将番茄搅拌成泥备用。(图3)
4. 起锅热油,把大葱炒至透明,加入研磨香料,炒约30秒钟。(图4)
5. 后加入番茄泥、优葛、盐及马铃薯,注入清水至滚。(图5-7)
6. 转小火加盖焖煮。
7. 烹调时确保汤汁不会太浓和烧粘底,但是稠度必须能够裹住马铃薯。起锅前加入发起鲜奶油。

【Ingredients】
12 even-sized small boiling potatoes, 8-10 Tbsps cooking oil 3 big onions(sliced), 2 large tomatoes(chopped), 180g plain yogurt, salt to taste, 180g heavy cream (optional)
【Ground Ingredients】
6-8 stalk dried chilies(cut into sections and soaked with hot water), 2.5cm ginger , 2 tsp cumin seed , 4 tsp ground coriander, 1 tsp turmeric, 3⁄4 tsp chilly powder [optional], 1 tsp garam masala,
【Method】
1. Boil the potatoes with the skin on until tender, once cool, peel the skin and set aside.
2. Grind ground ingredients in electric blender until fine.(pic 1-2)
3. Blend the tomatoes till smooth, set aside. (pic 3)
4. Heat oil in a large non-stick pan or wok, saute the onions until it turns caramel brown, add the ground ingredients and sauté for about 30seconds. (pic 4)
5. Add in tomatoes, yogurt, salt, and the potatoes and bring to a boil. (pic 5-7)
6. Reduce heat and simmer very gently, covered.
7. Check during cooking to make sure the gravy is not sticking and burning. The gravy should be thick enough to coat the potatoes.
