双耳小炒Stir Fried Minced Meat With Double Fungus

【材料】
肉碎180克、鲜云耳80克、雪耳20克(浸发)、西芹1支、红辣椒1条、蒜茸1汤匙

【调味料】
生抽1汤匙、浓缩鸡精1茶匙、蚝油1茶匙、水3汤匙、麻油1茶匙

【做法】
1.将鲜云耳及雪耳切碎,西芹及红辣椒切细末。(图1-2)
2.将云耳及雪耳碎末放入干镬以慢火炒至干身,铲起待用。(图3)
3.烧热3汤匙油爆香蒜茸,放入肉碎炒至转色及松散,加入云耳、雪耳、西芹及调味料拌炒。(图4-6)
4.最后下红辣椒拌匀便可。(图7)

【Ingredients】
180g minced meat, 80g fresh black fungus, 20g dried white fungus(soaked), 1 stalk celery, 1 red chilli, 1 tbsp chopped garlic

【Seasoning】
1 tbsp soy sauce, 1 tsp chicken essence, 1 tsp oyster sauce, 3 tbsp water, 1 tsp sesame oil

【Method】
1.Chopped black fungus and white fungus; chopped celery and chilli, set aside.(pic 1-2)
2.Stir fry both fungus in wok till dry, set aside.(pic 3)
3.Heat 3 tbsp oil in wok, sauté garlic till fragrant, add mince pork and fry till change color, add in celery, fungus and seasoning, fry well. (pic4-6)
4.Add in red chilli, mix well and dish out. (pic 7)
