墨西哥馅饼 Mexico BBQ quesadillas with pineapple mango guacamole

【材料】
皮塔饼5个(一开二)、去骨无皮鸡胸肉、Cheddar芝士100克(切粒)
【酱汁】
烧烤酱80毫升、黄梨汁、酸柑汁及青葱汁各2汤匙、盐1⁄4 茶匙、胡椒粉1⁄2 茶匙
【黄梨芒果鳄梨酱】
黄梨1⁄4粒、芒果1⁄2粒(去皮切丁)、鳄梨(牛油果)2粒(去皮去核捣烂)、切丁番茄半杯、青葱1汤匙、
莞荽1棵(剁碎)、 酸柑汁1粒、黄梨汁1汤匙、盐和胡椒粉适量
【做法】
1. 所有烧烤酱材料混合均匀。
2. 把一半的烧烤酱拌炒鸡肉6-8分钟至熟。(图1)
3. 把所有鳄梨酱材料 混合,调味。
4. 热平底锅,以少许橄榄油把皮搭饼逐个煎热。(图2)
5. 把鸡肉、芝士塞进皮搭饼,并淋上黄梨芒果鳄梨酱。(图3-5)
6. 吃时配剩余的烧烤酱。

【Ingredients】
5 whole size pita bread(cut into 2), 300g boneless skinless chicken breast, 100g cheddar cheese (cube)
【Sauce Ingredients】
80 ml BBQ sauce, 2 tablespoons pineapple juice, 2 tbsp lime juice, 2 tbsp fresh cilantro(juice), 1⁄4 tsp salt, 1⁄2 tsp pepper
【Pineapple Mango Guacamole】
1⁄4 whole fresh pineapple(peeled, cored, and cubed), 1⁄2 mango (peeled, seeded and diced), 2 avocados(peeled, pitted and mashed), 1⁄2 cup grape tomatoes(diced), 1 tbsp chopped spring onions(chopped), 1 tbsp fresh cilantro(chopped), 1 lime(juiced), 1 tbsp pineapple juice, salt and pepper to taste
【Method】
1. In a small bowl combine all the BBQ sauce ingredients and mix well to combine.
2. Toss the chicken with half of the BBQ sauce. Pan-fry the chicken for 6 to 8 minutes or until cooked through. (pic 1)
3. Combine all Guacamole ingredients and adjust seasoning.
4. Heat skillet over medium heat with a bit of olive oil, heat up pita one at a time.(pic 2)
5. Fill in chicken and cheese, then add pineapple mango guacamole.(pic 3-5)
6. Serve with the remaining BBQ sauce.
