【材料】
去皮鸡胸肉400克
【混合粉料】
面粉2汤匙、薯粉2汤匙、粘米粉1汤匙(全部混合)
【椒盐料】
幼盐1茶匙、胡椒粉少许、辣椒粉1茶匙、味精1⁄2茶匙
【腌鸡料】
米酒1汤匙、胡椒粉少许、五香粉1⁄4茶匙、沙姜粉1⁄2茶匙、姜汁1汤匙、盐1⁄4茶匙、生抽1汤匙、麻油
1茶匙
【做法】
1. 把鸡胸肉用刀对半切后划一刀摊开再划一刀分成大薄片,稍槌松。(图1)
2. 加入腌料拌匀腌1小时或以上备用。(图2-3)
3. 扑上混合粉料然后压紧,把鸡扒放入热油中炸至香脆,取出置放在吸油纸上吸干油。(图4-6)
4. 在鸡排上撒上椒盐料即可。(图7)

【Ingredients】
400g skinless chicken breast
【Coating】
2 tbsp plain flour, 2 tbsp tapioca flour, 1 tbsp rice flour (mixes all)
【Pepper salt】
1 tsp fine salt, dash of pepper, 1 tsp chili powder, 1⁄2 tsp MSG
【Condiments】
1 tbsp rice wine, dash of pepper, 1⁄4 tsp 5 spices powder, 1⁄2 tsp Sha Jiang powder, 1 tbsp ginger juice, 1⁄4 tsp salt, 1 tbsp soy sauce, 1 tsp sesame oil
【Method】
1. To prep the chicken breasts, butterfly them, and pound them with a meat pounder until they’re evenly flat.(pic 1)
2. Marinate with condiments for 1 or more hours.(pic 2-3)
3. Spread coating on chicken chop, press firmly and then deep fry in hot oil until crispy; drain on top of paper towel.(pic 4-6)
4. Sprinkle pepper salt on top to serve.(pic 7)
