娘惹酸辣凤爪 Nyonya Sour and Spicy Chicken Feet

材料
鸡脚8只、香茅2支(切细)、指天椒6条(切粒)、大葱头1粒(切片)、枫柑叶3片、姜花1棵(切末)、芫茜1棵(切小段)
芝麻1汤匙(炒香)
酱料
鱼露1½汤匙、酸梅酱3汤匙、糖1汤匙、酸柑汁2汤匙、熟油2汤匙
浸泡鸡脚
苏打粉1汤匙、清水1杯
做法
1 鸡脚放入沸水中川烫,捞出立刻浸泡入冷水20分钟。
2 用刀从鸡脚背划一刀,再用刀尖伸进去慢慢割除鸡皮两边,把长骨取出,然后用刀慢慢往鸡趾推开骨头至骨分离。

3 苏打粉加热水开溶后,加入清水拌匀,放入鸡脚皮浸泡
2-3小时。(图4)
4 取出洗净,然后川烫沸水,再以细水长流法1-2小时,滴干便可。(图5)
5 把处理好的鸡脚皮放入大碗中,加入其余配料捞匀,再把酱料混合好后淋入,洒入炒香芝麻即可。(图6-7)

INGREDIENTS
8 pcs chicken feet, 2 stalk lemon grass (chopped), 6 chili padi (chopped), 1 onion (sliced), 3 sprigs kaffir
lime leaves, 1 stalk Bunga kandang, 1 stalk coriander (cut sections), 1 tbsp toasted sesame seed
SAUCE
1 ½ tbsp fish sauce, 3 tbsp plum sauce, 1 tbsp sugar, 2 tbsp lime juice, 2 tbsp cooked oil
MARINADE
1 tbsp baking powder, 1 cup water
METHOD
1 Blanch chicken feet in boiling water, soak in cold water for 20 minutes.
2 Use knife to remove the skin to separate from bone. (pic 1-3)
3 Dissolve the baking powder with hot water, mix in cold water and put in chicken feet skin, soak
for 2-3 hours. (pic 4)
4 Wash the skin and then blanch in boiling water again; soak in running tape water for 1-2 hours;
drain until dry. (pic 5)
5 Mixes all other ingredients with the skin, pour mixed sauce over, sprinkle sesame seed on top
to serve. (pic 6-7)
