青芒果沙律炸鱼柳 CRISPY FISH WITH GREEN MANGO SALAD

材料
红綢鱼肉220克、盐½茶匙、胡椒粉½茶匙、炸油适量
青芒果沙律材料
青芒果丝30克、小葱头3粒(切丝)、指天椒3-4条(
切粒)、现买烘花生少许(捣碎)、姜丝1汤匙、麻油1
茶匙、鱼露1茶匙、黄糖½汤匙
做法
1 以盐和胡椒粉腌鱼肉。(图1)
2 热油把鱼肉炸至金黄色,滴干。(图2-3)
3 把所有青芒果沙律材料混合。(图4)
4 将鱼肉排碟。(图5)
5 铺上青芒果沙律即可。(图6)

220g red snapper, ½ tsp salt, ½ tsp pepper, some oil
for deep-frying
GREEN MANGO SALAD
30g shredded green mango, 3 shallots (sliced), 3-4
bird’s eye chilies (chopped), Some crushed peanuts
(store-bought), 1 tbsp shredded ginger, 1 tsp sesame
oil, 1 tsp fish sauce, ½ tbsp brown sugar
METHOD
1 Season fish fillet with salt and pepper. (pic 1)
2 Heat oil in a wok, deep-fry fish fillet until golden
brown. Drain off oil. (pic 2-3)
3 Toss all green mango salad ingredients in a mixing
bowl and mix well. (pic 4)
4 Arrange fish fillet in the plate. (pic 5)
5 Top with mango salad and serve at once. (pic 6)
