    心得交流站 : 素螺肉要炸透炸脆才好吃,所以一定要回锅炸2次。

    Step 1

    素螺肉:香菇对半剪开,底部斜切三分,搾干水份沾上生粉卷起,炸时再滚上生粉,慢火炸脆,备用。Mock escargot:Halve Chinese mushroom and cut 3 slits slantwise at bottom;squeeze out water,coat with corn flour and roll up;before deep frying,coat with corn flour again and deep fry in low heat until crispy.

    Step 2

    爆香材料C,加入材料B炒香,加入调味料,大火煮至收汁后,再加入九层塔和炸脆的素螺肉炒匀,上碟趁热享用。Sauté ingredients C,toss in ingredients B until fragrant;add in seasoning,bring to boil until gravy reduced;toss in basil and fried mock escargot,dish out and serve.
