日本大阪烧 Okonomiyaki

【材料】
普通面粉120克、清水120-130毫升、A蛋1粒、鸡粉1茶匙、包菜100克(切细丝)、红萝卜30克(切细丝)、青葱1条(剁碎)、盐和胡椒粉适量、蟹柳4-6条(切丝)
【顶料】
日本黑醋或照烧酱适量,日本美奶滋,海苔芝麻碎少许,柴鱼片少许
【做法】
1. 把鸡粉、面粉,清水及鸡蛋混合。(图2-3)
2. 加入包菜,红萝卜及青葱;以盐和胡椒粉调味。(图4-5)
3. 在不黏锅热油,倒入面糊,上铺蟹柳丝,稍微压紧。(图6)
4. 以中火煎至两边金黄色,中途翻转。(图7)
5. 淋上顶料即可趁热吃。(图8)

【Ingredients】
120 g plain flour, 120- 130 ml water, 1 “Grade A” egg ,1tsp chicken stock granules, 100 g cabbage(shredded finely), 30 g carrot(shredded finely), 1 stalk of spring onion(chopped), salt & pepper to taste, 4-6 crabsticks (sliced thinly)

【For topping】
Okonomiyaki sauce (Japanese Worcestershire sauce) to taste/ alternatively use ‘teriyaki’ sauce , Japanese mayonnaise to taste(use a piping bag to pipe), some furikake to taste, some bonito flakes

【Method】
1. Mix the flour, water & egg in a large bowl. (pic 2-3)
2. Mix in stock granules, cabbage, carrot, spring onion; adjust salt & pepper to taste.(pic 4-5)
3. Heat cooking oil in a non-stick pan, pour in batter mixture and top up with crab sticks pieces. Slightly press crab sticks to stick on batter with spatula.(pic 6)
4. Cook on medium heat until golden brown on both sides, flipping over half way through.(pic 7)
5. Spread with topping while hot.(pic 8)
