    冰皮月饼最大的特色莫过于它冷藏后更加美味的口感。

    Step 1

    椰蓉馅料:把牛油、糖及椰丝放入不黏锅里炒热,然后加入清水、糕粉,炒均后拌入蔓越梅干,分成40克等份,搓圆。Coconut filling:Put butter, sugar and grated coconut in a non-stick pan. Stir-fry till heated up.Add water followed by koh fun. Stir-fry until well combined and dried. Add in cranberries to mix. Divide into 40g portions. Roll into a small ball.

    Step 2

    把莲蓉分成80克等份,包入1份椰蓉。Divide lotus paste into 80g each then wrap in a piece of coconut filling.

    Step 3

    冰皮做法:把糕粉、糖粉及白油混合,另外在水里加入色素,然后倒在粉料上,搓成软面团,再分成55克等份,包入1份馅料,然后放入月饼模里,轻压后扣出即可。Mooncake pastry:Mix koh fun with icing sugar and add in shortening. Combine colouring with cold water and pour this liquid into the koh fun mixture. Mix into a soft dough. Divide dough into 55g approximately. Wrap in a piece of filling. Press into a mooncake mould and tap out lightly to unmould.
