泰式冬粉虾 Thai Style Prawns with Glass Noodles

┃材料┃
生虾 6只、冬粉50克(浸软)、蒜茸30克、姜茸30克、切
碎小辣椒10克、清水 700毫升、葱花30克、芹菜叶少许
┃调味料┃
盐½茶匙、鸡精粉 ½茶匙、鸡汁1汤匙、胡椒粒½汤匙
┃做法┃
1. 虾开背,洗净沥干,入热油炸熟,捞起沥干。(图1)
2. 炒锅烧热,倒入清水700克煮沸。
3. 下调味料、姜茸、辣椒、蒜茸,中小火煮至沸,加入
虾煮片刻。(图2-4)
4. 起锅前加入冬粉煮沸,将材料转去砂锅/瓦煲。(图5)
5. 撒上葱花和芹菜即可。

┃INGREDIENTS┃
6 large prawns, 50g glass noodle (soaked), 30g
minced garlic, 30g minced ginger, 10g chopped chilli
padi, 700ml water, 30g chopped spring onion, some
Chinese parsley leaves
┃SEASONINGS┃
½ tsp salt, ½ tsp chicken seasoning powder, 1 tbsp
chicken seasoning sauce, ½ tbsp peppercorn
┃METHOD┃
1. Butterfly the prawns with shells and tails on. Scald
the prawns in hot oil, drain. (pic 1)
2. Heat up a wok, pour in water and bring to a boil.
3. Add seasonings, minced ginger, garlic, chillipadi
and cook over medium heat. Add prawns and cook
for a few minutes. (pic 2-4)
4. Put in glass noodles and bring to a boil before
transferring the dish to a clay pot. (pic 5)
5. Sprinkle chopped spring onion and Chinese
parsley on top. Serve.
