泰式香椰鸡肉盅Thai Style Chicken in Fresh Coconut

【材料】
鸡肉400克、咖哩叶10片、香椰青1粒、红辣椒2条、指天椒6条

【腌料】
蛋白1粒、鸡精粉½茶匙、盐少许、胡椒粉少许、生粉1汤匙

【调味料】
鱼露1汤匙、鸡精粉1茶匙、糖半茶匙、椰青水1杯

【做法】
1. 将鸡肉加入腌料拌匀,腌15分钟备用。(图1)
2. 将椰青肉挖出,椰水留用。
3. 鸡肉拉油七分熟。(图2)
4. 烧红锅,把椰水倒入,下咖哩叶、红辣椒丝、指天椒煮片刻,倒入调味料拌匀,打薄芡倒入椰青盅即可。(图3-5)

【INGREDIENT】
400g chicken meat, 10 sprigs curry leaves, 1 whole young coconut, 2 red chili, 6 chili padi

【CONDIMENTS】
1 egg white, ½ tsp chicken powder, dash of salt & pepper, 1 tbsp corn flour

【SEASONING】
1 tbsp fish sauce, 1 tsp chicken powder, ½ tsp sugar, 1 cup coconut juice

【METHOD】
1. Marinate chicken meat with condiments for 15 minutes.(pic 1)
2. Scoop out flesh of coconut and keep the coconut juice.
3. Blanch chicken meat in hot oil until 70% cooked.
4. Then pour in coconut juice, add in curry leaves, juliennes red chili and chili padi, cook briefly, add in seasoning and mix well; lightly thicken with starch and shift whole stuff into coconut shell and serve. (pic 3-5)
