海南猪扒 Hainanese Pork Chops

【材料】
猪里脊肉250克、鲜奶油80克、咸苏打饼数片(磨碎)、鸡蛋1大粒(打散)、炸油适量、马铃薯1大粒(去皮切粒)、大葱
1粒 (切片)、小番茄2粒(切瓣)、青豆100克
【酱汁】混合
蚝油1汤匙、李派林黑醋1汤匙、胡椒粉少许、酱油2茶匙、番茄酱3汤匙、辣椒酱1汤匙、盐1茶匙或适量、白糖2茶匙、清水
250-300毫升、生粉2茶匙+清水2汤匙
【做法】
1.将猪里脊肉切片,然后用松肉槌或刀背把肉敲松。
2.把猪扒沾蛋液后再沾饼碎,确保沾均匀,甩掉额外的饼碎。(图1-2)
3.以热油炸猪扒至金黄色,然后放在纸巾上吸干油。(图3)
4.留3汤匙油在锅,以中火炒马铃薯5分钟至微黄后盛出。(图4)
5.用剩余的油把大葱炒2-3分钟至软后,加入所有酱汁材料,
煮至滚后加入马铃薯,煮至软。(图5-6)
6.加入猪扒、番茄和青豆,焖煮1分钟后以生粉水勾芡。(图7)

【Ingredients】
250 g pork tenderloin, 80g cream, some saltine crackers(crush into crumbs),1 large egg(well beaten), oil
for deep-frying, 1 large potatoes(peeled and cubes), 1 big
onion(sliced), 2 small tomatoes(quartered), 100 g frozen peas
【Sauce】combined
1 tbsp oyster sauce, 1 tbsp Worcestershire sauce or HP sauce, dash of ground white pepper, 2 tsps light soya sauce,
3 tbsps tomato ketchup, 1 tbsp chilly sauce, 1 tsp salt or to taste, 2 tsps sugar or to taste, 250 ml- 300 ml
water, 2 tsps cornflour + 2 tbsps water for thickening
【Method】
1. Slice the pork tenderloin and using a meat mallet or back end of cleaver pound & flatten them lightly.
2. Dip the chops in the egg sauce, then in the cracker crumbs, patting them to form an even layer and shaking off
any excess. Repeat the process to obtain a secure, even coating.(pic 1-2)
3. Heat the oil in a wok until hot, deep-fry the pork chops until golden brown, turning once. Remove and drain well on
paper towels.(pic 3)
4. Remain 3 tbsp oil in the wok, fry the potatoes cubes over medium heat for 5 minutes, turning frequently, until
browned. Remove the potatoes.(pic 4)
5. Stir-fry the onions in the remaining oil until soft, 2-3 minutes, then add all the sauce ingredients. Bring to a boil,
add the potatoes and cook until they are tender.(pic 5-6)
6. Add in the crispy fried mini chops, peas and tomatoes and simmer for 1 minute, adding the thickening solution.(pic 7)
