海南鸡饭 Hainam Chicken Rice

【鸡肉材料】
菜园鸡1只(约2公斤)、姜1块
【饭团材料】
米1公斤、鸡汤1公升、油1汤匙、蒜茸1茶匙、班兰叶2片
【辣椒酱】
红辣椒150克、小辣椒70克、蒜米70克、桔子4粒、幼盐2茶匙
【鸡肉做法】
1.将姜块打扁,塞进鸡肚里。
2.锅内注入可以盖过鸡的清水,煮至80%滚,放入鸡只,用大火煮15分钟,再关火浸泡10分钟。(图1)
3.取出鸡只斩件排上碟。鸡汤留用。
【饭团做法】
1.把米洗净,滤干。
2.热油锅,加入1汤匙油,爆香蒜茸,加入米炒至半熟后,将饭移入饭锅里与鸡上汤及班兰叶一起煮熟。(图2-4)
注: 可多加点汤,待饭熟后,较容易搓圆。
【辣椒酱】
在电动搅拌器内将所有辣椒酱材料搅烂,取出,加2茶匙幼盐调味,并挤入4粒桔子汁即可。(图5-6)
【吃法】
取少许饭搓圆成饭团,配鸡肉一起享用。(图7-8)

【Chicken Ingredients】
1 whole farm chicken (about 2 kg), 1 piece ginger
【Rice Ingredients】
1kg rice grain, 1 litre chicken stock, 1 tbsp oil, 1 tsp chopped garlic, 2 sprig pandan leaves
【Chilli Sauce】
150g red chilli, 70g chilli padi, 70g garlic, 4 kasturi lime, 2 tsp fine salt
【Method for Chicken】
1.Smash the ginger and stuff into chicken’s cavity.
2.Fill water in a stock pot enough to cover the chicken. Heat water until reaching 80% boiling point, put in the
chicken, cook with high heat for 15 minutes. Off heat and simmer chicken for another 10 minutes.(pic 1)
3.Remove chicken and chopped. Keep the stock for later use.
【Method for Rice Balls】
1.Wash rice and drain.
2.Heat 1 tbsp oil in wok, sauté 1 tsp chopped garlic until fragrant. Add in rice grain, stir to mix and then
transfer to an electric rice cooker, pour in chicken stock to cook.
note: May add extra little stock to make the rice easy to shape into balls.
【Method for Chilli Sauce】
Grind all the red chilli, chilli padi and garlic, season with 2 tsp fine salt. Squeeze in lime juice, done.(pic 5-6)
【To Serve】
Apportion rice and shape into balls, serve together with chicken.(pic 7-8)
