火腿蛋派 Bacon egg Pie

材料:

柑榄油1茶匙、大葱1/2粒(剁碎) 、熏火腿50克(剁碎) 、香肠1条(切片) 、灯笼椒50克(任何颜色) 、全麦面包5片 、牛奶60毫升、A蛋4粒、盐和胡椒粉适量

可随意增加蒸过的雪豆、芥兰花和红萝卜配着吃

做法:

    1. 用锅热油,把火腿、香肠炒5分钟后,加入大葱,再炒5分钟至大葱软身后加入灯笼椒。
    2. 把鸡蛋、牛奶和调味料混合。
    3. 把烤炉预热至180° C,把一个3公分深20公分宽的烤盘或鹹派模具涂油。
    4. 用木杆把面包杆平,一面涂以牛油。
    5. 把面包铺在烤盘上,层叠以让它们完全遮盖烤盘,然后倒入一半的火腿材料在面包上,然后把整粒蛋打在材料上。
    6. 放入烤炉烤至蛋熟。
    7. 切成4份,配蒸蔬菜吃。

Ingredients:

1 tsp olive oil, ½ onion, chopped, 50 g bacon, chopped, 1 sausage, sliced, 50 g capsicum, chopped [any colour or mix], 5 slices wholemeal bread, 60 ml milk, 4 grade “A” eggs, salt & pepper to taste, extra 2 Grade “A” eggs for topping

* steamed snow peas, broccoli and carrot, to serve on the side if wished

 

Method 

  1. Heat oil in a pan, add bacon, sausage and cook, stirring, for 5 minutes. Add onion. Cook, stirring, for a further 5 minutes or until onion is soft. Toss in capsicum.
  2. In a bowl, combine eggs, milk, seasonings, sautéed mixture adjusting seasonings to taste.
  3. Preheat oven to 180° C. Lightly grease a 3cm deep, 20cm (base) flan or quiche dish.
  4. Using a rolling pin, roll out bread until flat. Butter one side of the bread.
  5. Arrange bread over base and sides of dish, overlapping so base is completely covered. Spread half the bacon mixture over bread base. Crack whole eggs over mixture.
  6. Bake pie for 20 minutes or until eggs have set.
  7. Cut into 4. Serve with mixed steamed vegetables.
