火龙果燕菜蛋糕Dragon Fruit Jello Cake

【材料】
第一层:椰糖燕菜
马六甲椰糖100克、清水300毫升、班兰叶2片(打结)、清水300毫升、燕菜粉1汤匙
第二层:椰浆燕菜
A:燕菜粉1 1/2汤匙、白糖200克、盐1茶匙、清水400毫升
B:椰浆头400毫升、栗米粉60克、淡奶125毫升(混合)
第三层:火龙果燕菜
A:燕菜粉2汤匙、白糖100克、清水300毫升
B:火龙果肉200克、清水300毫升
第四层:蛋糕
A蛋3粒、A蛋黄2粒、白糖125克、盐1/4茶匙、普通面粉90克、栗米粉60克、发粉3/4茶匙、蛋糕稳定剂1茶匙、清水45毫升溶解牛油60克(保持温度)、12寸烤盘1个

【蛋糕做法】
1.把烤炉预热至180℃,在12寸的蛋糕盘里铺防油纸。
2.用电动搅拌器把所有材料混合搅拌至发起。(图1)
3.加入牛油搅拌均匀后把面糊倒入蛋糕盘里。烤约15分钟,用竹签插入测试,以不沾物为准。(图2)

【椰糖燕菜做法】
把椰糖和300毫升清水加班兰叶煮滚至椰糖溶解,然后过滤至另一个干净的锅里,加入另外300毫升清水和燕菜粉。煮至滚后熄火,把材料倒入蛋糕盘里。(图3)

【椰浆燕菜做法】
当材料A里的燕菜完全煮至溶解后,加入材料B。再滚时即刻熄火。慢慢把椰浆混合料倒在椰糖层上。(图4)

【火龙果燕菜做法】
1.把材料A煮至滚;另外把材料B放入电动搅拌器搅拌至细。(图5)
2.把火龙果泥加入A的混合料里。(图6)
3.然后把火龙果燕菜混合料倒在椰浆层上,铺上蛋糕,等完全冷却后才收入冰箱。(图7)
4.吃前把周围修饰后才切成四方块。

【Ingredients】
1st layer : Gula Melaka
100g gula Melaka, 300 ml water, 2 knotted pandan leaves, 300ml water, 1 tbsp agar-agar powder
2nd layer : Santan agar-agar
A:1 1/2 tbsps agar-agar powder, 200 g sugar, 1 tsp salt, 400 ml water
B:400 ml thick coconut milk, 60g corn flour, 125 ml evaporated milk
3rd Layer: Dragon fruit layer
A:2 Tbsps agar-agar powder, 100 g sugar, 300 ml water
B:200 g dragon fruit, 300ml water
4th Layer : Cake
3 “Grade A” eggs, 2 “Grade A” egg yolks, 125 g sugar,1/4 tsp salt, 90 g plain flour, 60g corn flour, 3/4 tsp baking powder,1 tsp ovalett, 45ml water
60g melted butter (keep warm), 1 square tray(12 inches)

【Prepare the cake layer first】
1.Preheat oven to 180℃, line a 12 inch cake tray with greaseproof paper.
2.Using an electric beater fitted with a balloon whisk; beat all its ingredients together till creamy.(pic 1)
3.Once its fluffy, add in hot melted butter and pour into the 12 inch greased & lined tray. Bake for 15 minutes or until skewer inserted comes out clean. Leave cake to cool.(pic 2)

【To prepare the gula Melaka layer】
Bring gula Melaka and 300ml water to a boil with the pandan leaves until dissolves, sieve into a clean pot; then add in another 300 ml water and the agar-agar powder.Heat up again, once boil, turn off heat and pour into the 12 inch tray. Leave to set. (pic 3)

【To prepare the santan layer】
Boil all A in a pot until dissolve, add in all B ingredients, cook over low heat stirring.Turn off heat immediately once the mixture starts to boil. Slowly pour this Santan layer onto the half set gula Melaka layer. Leave to cool.(pic 4)

【To prepare dragon fruit layer】
1.Boil A till it dissolves. Using an electric blender puree B until fine.(pic 5)
2.Pour dragon fruit puree into the boiling mixture A and turn off heat.(pic 6)
3.Pour dragon fruit agar-agar mixture onto the Santan layer.Then place the cooled cake over it. Let it set completely before chilling in the refrigerator.(pic 7)
4.Trim the cake discarding the uneven sides, before slicing into cute pieces to serve.
