馅料
咸蛋黄5粒、莲蓉300g
油皮材料
面粉150g、白油75g
水皮材料
面粉300g、白油60g、白糖30g、青色素适量、清水120g
做法
1 分别把油皮和水皮材料混合搓成面团。(图1-2)
2 用100克的水皮,包着30克油皮,擀成长方形,卷成圆筒状。(图3-4)
3 用15克的莲蓉包扎¼的咸蛋黄,作为馅料
4 把面团切分成每份20克,擀成圆皮状,包上莲蓉馅,捏成苹果造型。(图5-6)
5 开热油锅后关火,放入苹果酥浸约3分钟,便开火炸,捞起便可。(图7-8)

INGREDIENTS
5 salted egg yolks, 300g lotus paste
OIL SKIN
150g plain flour, 75g shortening
WATER SKIN
300g plain flour, 60g shortening, 30g sugar, some green coloring, 120g water
METHOD
1 Mixes oil skin and water skin ingredients separately and knead into dough. (pic 1-2)
2 Use 100g of water skin to wrap up 30g oil skin, pin roll into rectangular shape and then roll into
cylinder shape. (pic 3-4)
3 Wrap up ¼ salted egg yolk with 15g lotus paste as filling.
4 Cut the cylinder dough into 20g each, flatten and wrap with 1 portion of filling, shape like apple.

5 Heat oil in wok, turn off heat before deep fry the apple shape dough for 3 minutes until it open
up, drain. (pic 7-8)
