心得交流站 : 用气压锅可以把烹调时间缩短至⅓。 猪尾补腰益骨,也称皮打皮、节节香。由皮质和骨节组成,皮多胶质重,多用于烧、卤、酱、凉拌等烹调方法。猪尾有补腰力、益骨髓的功效。猪尾含有较多的蛋白质,主要成分是胶原蛋白质,是皮肤组织不可或缺的营养成分,可以改善痘疮所遗留下的疤痕。猪尾连尾椎骨一道熬汤,具有补阴益髓的效果,可改善腰酸背痛,预防骨质疏松;在青少年男女发育过程中,可促进骨骼发育,中老年人食用,则可延缓骨质老化、早衰。
把深锅加热,放入猪尾、猪手、鸡脚、莲藕及香菇,炒一会后加入混合调味料,煮至滚。Heat a deep saucepot until hot. Add pigtail, trotters, chicken feet, lotus root and mushrooms.Stir for a while. Pour in combined seasoning and add the rest of the ingredients.Bring to a boil.
转小火,焖煮1½小时至软身。Reduce the heat and simmer covered for 1½ hours until meat is tender.
取出莲藕,切片即可。Remove lotus roots and cut into thick slices.
