甲必丹咖喱鱼头Kapitan Curry Fish Head

【材料】
红鲷鱼头1只、麻疯柑叶5片、酸柑2粒(榨汁)、浓椰浆180毫升、(亚参膏20克、水2碗,拌匀过滤)

【磨烂用料】
小葱头12粒、蒜头1粒、石古仔5粒、黄姜1小块、南姜20克、辣椒干30条、红辣椒5条、马来栈1小块

【调味料】
盐1茶匙、味精1茶匙、糖1茶匙

【做法】
1.烧热5汤匙油爆香磨烂用料。
2.倒入亚参水及疯柑叶煮滚。
3.放入鱼头转小火焖煮至鱼头熟时,加入椰浆及调味料煮滚。
4.熄火后淋入酸柑汁拌匀即可。

【Ingredients】
1 whole red snapper, 5 sprigs kaffir lime leaves, 2 lime (juice), 180ml thick coconut milk, Asam jawa juice (wash from 20g asam jawa paste with 2 bowls water, filtered)
Grounded ingredients:
12 pcs shallot, 1 whole garlic, 5 pcs Buah keras, 1 small piece turmeric, 20g galangal, 30 dried red chili, 5 red chili, 1 small piece balacan

【Seasoning】
1 tsp salt, 1 tsp MSG, 1 tsp sugar

【Method】
1.Sauté grounded ingredients with 5 tbsp oil until fragrant.
2.Pour in Asam Jawa juice and kaffir lime leaves and brings to boil.
3.Add in fish heah and simmer in low heat until cooked; pour in coconut milk and seasoning and let boil again.
4.Toss in lime juice once turn off heat.
