中秋除了传统月饼备受欢迎,可爱的造型月饼也相当吸引人,拿来送人也很大方呢。

    Directions

    Step 1

    饼皮做法To made skin: 把糖浆、花生油及碱水混合。盖上保鲜膜,醒1小时。Combine golden syrup, oil & lye water in a mixing bowl, cover with a cling film & rest for 1 hour.

    Step 2

    慢慢拌入面粉搓成面团,盖上保鲜膜,再醒1小时。如果面团太黏手,可加1-2汤匙面粉。Slowly sift in the flour and mix into a dough. Cover with cling film and rest for another hour before using.

    Step 3

    兔子月饼做法To shape into bunny mooncake: 把馅料材料全部捞匀搓好,分成50克1份。Mix all the filling together, scale into 50g per portion.

    Step 4

    把月饼皮料分成60克等份。Scale mooncake dough into 60 g portions.

    Step 5

    压平面团成圆形,中间包入馅料。Flatten dough, place the filling in the centre & wrap into a ball.

    Step 6

    用掌心把包馅面团做成水珠状小球。Using palms, lightly shape into a tear-drop like ball of dough.

    Step 7

    轻压前半部,做成兔子头。Press lightly 1/3rd of the bunny with your fingers, for the head.

    Step 8

    挤压两边,用刷子把耳部弄湿然后粘上两个小水珠面团充作耳朵。Lightly press the 2 sides to denote the ears.Shape a small tear drop from the dough, for the ears.

    Step 9

    用刷子柄部在眼睛部位作记号,用水弄湿,贴上红豆当眼珠。另外用小面团作鼻子。Brush with some water & press the ears to adhere.Mark the eye positions with the back of the brush, brush some water as glue, then place the red bean/ quinoa for the eyes. Shape a small ball of dough for the nose.

    Step 10

    最后再做一个较大圆球面团作尾巴,用刷子涂水粘上。Shape a bigger ball for the tail, brush with water & stick the tail onto the bunny.

    Step 11

    组合To bake mooncakes: 把烤炉预热至180℃,烤盘涂油。Preheat oven to 180℃, grease trays.

    Step 12

    在整只兔子涂蛋液,然后放在涂油烤盘内,放入烤炉里烤20分钟,取出让它冷却。Brush with egg wash & bake for 20 minutes. Remove from oven to cool.
