糖焦巧克力芝士蛋糕

底层材料
消化饼230克(压碎)、溶解牛油150克、黄糖30克、即溶咖啡粉1汤匙+清水2汤匙
230 g digestive cookies(crushed), 150 g melted butter,30 g brown sugar,1 Tbsp instant coffee granules + 2 Tbsps water

9寸可拆卸蛋糕盘(涂油铺铝箔)
9” round loosebottom cake pan(greased & wrapped with foil over )

蛋糕材料
费城芝士奶油500克(室温)、盐 1/2 茶匙、细糖130克、栗米粉21/2 汤匙、A蛋4粒、无糖鲜奶油300毫升、咖啡酒5汤匙、巧克力150克(刨茸)
500 g philladelphia cream cheese(at room temperature),182 tsp salt,130 g castor sugar, 2 1/2 Tbsps corn flour, 4 “Grade A’ eggs, 300 ml dairy non sweetened cream, 5 Tbsps Kahlua ‘coffee liquer’,150 g grated chocolate

巧克力顶料
A:无糖鲜奶油120毫升、黑巧克力200克、咖啡酒2汤匙
A:120 ml non-dairy sweetened cream, 200g dark chocolate, 2 Tbsps kahlua

B:意大利金沙巧克力Ferrero Rocher
B:Ferrero Rocher(storebought)

焦糖
椰糖100克、鲜奶油70毫升、盐 1/4 茶匙、牛油25克
100 g gula melaka, 70 ml cream, 1/4 tsp salt, 25 g butter

底层做法
把所有材料混合铺在蛋糕盘里,压紧。收入冰箱待用。(图1-3)
GIn a mixing bowl, combine all ingredients and press onto the greased cake pan. Refrigerate until needed.(pic 1-3)

巧克力顶料做法
把巧克力和鲜奶油一起以中火煮至巧克力溶解,然后熄火,加入咖啡酒。放置待用。
Melt chocolate and cream together over medium heat untilchocolate melts. Remove from heat, stir in the Kahlua. Set aside.

糖焦做法
用不粘锅煮椰糖至溶解起泡,然后过滤入另一个不粘锅里,加鲜奶油、盐及牛油煮至稠即可。放置待用。
Using a non-stick pan, melt gula melaka until it bubbles, sieve into a clean non-stick pot and add cream, salt & butter. Remove from heat & leave to cool and thicken.

蛋糕做法
1.把烤炉预热至170℃,烤炉里放入一个装水托盘。
1.Pre-heat oven @ 170℃. Place a tray of water in the oven for placing the cake later.

2.以电动搅拌器把芝士奶油,盐及糖搅拌至发起。加入栗米粉,搅拌均匀。(图4)
2.In an electric beater or mixing bowl, beat cream cheese with salt, sugar until cheese is creamy. Beat in corn flour, until well mixed.(pic 4)

3.加入鸡蛋,搅拌至刚刚混合即可,然后加入咖啡酒和巧克力茸。(图5-6)
3.Beat in eggs and non sweetened cream until just mixed. Pour in Kahlua and grated chocolate.(pic 5-6)

4.把材料倒入冷藏的底层饼干上。放入烤炉隔水烤45-50分钟,蛋糕看起来还会晃动,关电源,让蛋糕留在烤炉里,关着门摆30分钟。(图7)
4.Pour the cheese mixture over chilled base. Bake cheesecake in pre-heated oven for 45 – 50 minutes. Cake will still be jiggly at this moment. Turn off heat.Leave cake in the oven, with the oven door closed for 30 minutes. (pic 7)

5.把烤炉门打开,让蛋糕留在烤炉里至完全冷却。
5.Open the oven door and leave until cool and refrigerate.

6.铺上顶料,摆Ferrero Rocher巧克力球在上面,再淋上糖焦即可。(图8-10)
6.Spread the topping over and top with the Ferrero Rocher and drizzle with caramel. Serve chilled.(pic 8-10)
