红枣南瓜蛋糕Red Dates and Pumpkin Cake

【材料】
牛油80克、白糖90克、杏仁粉80克、面粉30克、发粉1克、橙汁18克、鸡蛋90克、红枣30克(去核剁碎)、南瓜籽30克(剁碎)

【做法】
1. 把白糖和奶油搅拌至发起,然后加入杏仁粉、面粉及发粉拌匀。(图1-2)
2. 加入红枣和南瓜籽后,拌入鸡蛋和橙汁,搅拌均匀。(图3-5)
3. 把面糊倒入铺油纸的烤盘里,以175°C烤12-15分钟。(图6)
4. 趁蛋糕还温时把它切成6寸圆形。 (图7)

【红枣酱】
红枣15克(去核剁碎)、蜜糖30克、清水10克

【做法】
煮至红枣软化干水。

【南瓜慕丝】
烤南瓜120克、鱼胶粉5克、冷水25克、蜜糖10克、清水5克、发起奶油250克

【做法】
1. 把南瓜捣烂,加入鱼胶粉和冷水,搅拌均匀后收入冰箱15分钟。(图8)2. 取出加温,再加入蜜糖、水和鱼胶粉拌入发起奶油即可。(图9)

【组合】
1. 取7寸圆盘,放入一片红枣南瓜蛋糕在中间,倒入南瓜慕丝,然后涂上一层红枣酱。(pic 10)
2. 再放入另一片蛋糕,然后再抹上一层南瓜慕丝。
3. 收入冰箱冷藏后才吃。

【Ingredients】
80g butter, 90g sugar, 80g almond powder, 30g flour, 1g baking powder, 18g orange juice, 90g eggs, 30g red dates (stone removed, chopped) 30g pumpkin seed (chopped)

【Method】
1. Cream sugar and butter. Add in almond powder, flour and baking powder. (pic 1-2)
2. Fold in the red dates and pumpkin seed, mix well and pour in the eggs and orange juice. (pic 3-5)
3. Spread onto a baking tray lined with baking paper/silpat and bake at 175°C for 12-15 minutes. (pic 6)
4. While cake is still warm, cut with a 6″ round ring. (pic 7)

【Red Dates Compote】
15g red dates (stones removed, chopped), 30g honey, 10g water

【Method for red dates compote】
Boil all together until dates are soft and no more liquid.

【Pumpkin Mousse】
120g roasted pumpkin, 5g gelatine powder, 25g cold water, 10g honey, 5g water, 250g whipped cream (soft peak)

【Method】
1. Bloom roasted pumpkin and gelatine powder in cold water. Mix well and keep in the chiller for 15 minutes. (pic 8)
2. Warm puree, honey, water and gelatine mass.Fold in the whipped cream. (pic 9)

【Method】
1. In a 7″ round cake ring, place a slice of red dates and pumpkin cake in the center. Fill in with some mousse. Spread a layer of dates compote. (pic 10)2. Place another slice of cake and top up with mousse.
3. Freeze to set.
