绿茶棉花糖夾心派Green Tea Whoopi

【材料】
A:蛋黄70克、白糖50克
B:蛋白140克、白糖50克、蛋糕粉100克、绿茶粉4克

【芝士奶油馅料】
芝士奶油150克、糖粉20克、发起奶油60克、鲜草莓1粒(切片)

【做法】
1.把蛋黄和白糖搅拌至转色。(图1)
2.搅拌蛋白,慢慢加入白糖,搅拌成蛋白霜。(图2)
3.把蛋黄混合料加入蛋白霜里,然后加入其它B料。(图3-4)
4.把材料挤到硅油纸上,放入预热至175°C的烤炉里烤8分钟或至熟。取出待凉备用。(图5-6)

【芝士奶油馅料做法】
把芝士奶油搅拌至细滑。加入糖粉,继续搅拌至细滑即可。(图7-8)

【组合】
把芝士奶油馅料挤在棉花派上面,铺上草莓片。盖上另棉花派即可。(图9-10)

【Ingredients】
A:70g egg yolk, 50g sugar
B:140g egg white, 50g sugar, 100g cake flour, 4g
green tea powder

【Cream Cheese Filling】
150g cream cheese, 20g Icing sugar, 60g whipping cream, a fresh strawberries(sliced)

【Method】
1.Whip the yolks and sugar until pale in colour.(pic 1)
2.Whisk the egg white and slowly add in sugar to make meringue.(pic 2)
3.Fold in the egg yolk mixture to the meringue. Slowly fold in dry ingredients B.(pic 3-4)
4.Pipe onto silicon paper and bake at 175℃ for 8 minutes till cooked.(pic 5-6)

【To prepare Cream Cheese Filling】
Beat the cream cheese till smooth.Add in icing sugar and whipping cream.Continue to beat until smooth.(pic 7-8)

【To assemble】
Pipe cream cheese filling on cooled whoopie and arrange sliced strawberries. Top up with another piece of whoopie and serve.
