红烧鱼 Braised Fish

材料:

马友鱼      1条

辣椒仔      5 条(剁碎)

葱            50克(切断)

红辣椒      1条(切丝)

蒜头         50克(切片)

姜            50克(切片)

调味料:

绍兴酒      适量

胡椒粉      适量

老抽         适量

醋               适量

做法:

1  鱼用刀在两边背部轻轻划开,放入平底锅以少许油和盐煎片刻。(图1)

2  将鱼轻翻至另一面,加入姜,蒜头和辣椒仔继续煎片刻。(图2)

3  然后转大火,注入绍兴酒和适量的水煮开,上盖以小火焖煮10分钟。(图3)

4  加入老抽、醋、胡椒粉和盐调味,用勺子将汤汁淋至鱼身,加入薯粉去勾芡。(图4-5)

5  最后将鱼捞起后加入葱和红辣椒,将汤汁淋上即可。

 

INGREDIENTS :

1 Ma Yau fish,  5 chilli padi (chopped), 50g spring onion, 1 red chilli (juliennes). 50g garlic, 50g ginger (slices)

SEASONING :

Some Chinese cooking wine, pepper, dark soy sauce & vinegar

METHOD :

1   Cut 2 slits on both side of fish, sear in frying pan with low heat shortly. (pic 1)

2  Turn around the fish continue to sear, add in garlic and ginger.(pic 2)

3  Turn to high heat, add in wine and some water. Once boiled, cover the lid and simmer in low heat for 10 minutes. (pic 3)

4  Add in the rest of seasoning, pour gravy all over the fish, and thicken with starch.  (pic 4-5)

5  Dish out and garnish with red chilli and spring onion.
