脆花肉迷你汉堡 Crispy belly pork Mini burgers

【材料】
去皮花肉200克(切薄片)、炸油适量

【腌料】
蛋白1个、鸡粉1茶匙、盐1/2茶匙、面粉和薯粉各1 1/2汤匙、 小苏打粉1/4茶匙、胡椒粉1/4茶匙

【焦糖】
白糖3茶匙、清水1/4杯、黑酱油1/4茶匙、盐适量

【配料】
番茄片、青瓜片、生菜叶、芝士片及汉堡面包6个(对开涂牛油)

【做法】
1.用腌料腌猪肉片。
2.把猪肉片以热油炸至酥脆金黄色后滴干。(图1)
3.另外把糖煮至糖焦状,然后迅速加入清水,煮至稠后加入黑酱油和盐。(图2)
4.把脆猪肉片加入,搅拌均匀。(图3)

【组合】
把猪肉片、番茄、青瓜、生菜及芝士夹入汉堡面包内,淋上焦糖酱即可。(图4-7)

【Ingredients】
200g skinless belly pork(sliced thinly), cooking oil for deep-frying

【Marinate】
1 egg white,1 tsp chicken stock granules, 1/2 tsp salt, 1 1/2 tbsp plain flour, 1 1/2 tbsp tapioca flour, 1/4 tsp bicarbonate of soda,1/4 tsp ground white pepper

【Caramel Sauce】
3 tsp sugar or to taste, 1/4 cup water, 1/4 tsp dark soy sauce, salt to taste

【Sub-Ingredients】
Tomato(sliced), cucumber/ salad leaf, sliced Cheese Mini burger buns 6 -8 pcs (sliced horizontally and buttered)

【Method】
1.Marinate belly pork slices with marinade ingredients.
2.Deep-fry in hot oil until lightly golden and crispy. Remove and drain.(pic 1)
3.Heat sugar in a wok until caramelized, quickly add water and simmer until syrup thickens, adding dark soya sauce & salt to taste.(pic 2)
4.Toss the crispy belly pieces back and mix to combine.(pic 3)

【To assemble】
Sandwich the pork slices, tomato, cucumber, salad leaf and cheese into the burger bun.(pic 4-7)
