芋头烩烧肉 Braised Roasted Meat with Yam

【材料】
450克芋头(去皮)、250克烧肉、20克姜片、1汤匙蒜茸、30克虾米、1棵青葱(切段)、少许五香粉和少许胡椒粉腌烧肉
【调味料】
2汤匙生抽、½茶匙糖、少许胡椒粉、1茶匙鸡精粉、1茶匙麻油、少许黑酱油
【做法】
1. 虾米洗净沥乾,与蒜茸以适量油爆香,备用。
2. 芋头切滚刀状,放入热油中炸透及熟,捞出沥油,备用。(图1)
3. 留油2汤匙,爆香姜片及葱白,下烧肉及调味料,拌炒香。
4. 拌入炸香芋头并注入水淹盖过芋头一半,即可转中火盖上烩煮至芋够软。(图2-3)
5. 撒入炸香蒜茸、虾米及青葱兜匀,即可。(pic 4)

【Ingredients】
450g yam (peeled), 250g roasted meat, 20g ginger slices, 1 tbsp chopped garlic, 30g dried shrimp, 1 stalk
spring onion (cut sections), dash of 5 spices powder and pepper to marinate meat
【Seasoning】
2 tbsp soy sauce, ½ tsp sugar, dash of pepper, 1 tsp chicken powder, 1 tsp sesame oil, drops of dark soy
sauce
【Method】
1. Wash dried shrimp, drain and then sauté in hot oil with garlic until fragrant, dish out.
2. Cut yam into wedges and deep fry in hot oil until cooked, drain. (pic 1)
3. Keep 2 tbsp oil in wok, sauté ginger and white part of spring onion until fragrant; toss in roasted meat
and seasoning, stir-fry.
4. Add in fired yam, pour in water to cover half of the ingredients, simmer with medium heat till yam soft.

5. Sprinkle dried shrimp, garlic crisp and spring onion over before dishing out. (pic 4)
