    冰皮月饼先收入冰箱冷却后才享用才是最棒的。

    Step 1

    把熟红豆和绿茶莲蓉混合,然后分成20克1份,搓成小丸。白莲蓉则分成60克1份,包入绿茶莲蓉,搓圆。 Mix red beans into green tea lotus paste. Scale 20g green tea lotus paste and roll into a small ball. Scale white lotus paste into 60g and wrap each green tea lotus paste inside. Roll together into a ball. Leave aside.

    Step 2

    将芝士奶油、牛油、白油及盐搅拌至细滑。Put cream cheese,butter,shortening and salt into a mixing bowl. Beat gradually until smooth.

    Step 3

    加入冰皮混合粉料和发起奶油,搓成滑面团;然后分成80克1份。Beat in ping pei premix,chilled sugar syrup and thickened cream. Mix until a smooth dough is formed. Divide dough into 80g portions.

    Step 4

    把芝士奶油冰皮料擀成圆皮,包入1份馅料,搓圆。Roll out each portion of cheese pastry skin into a round circle. Wrap in a piece of filling and bring in the edges to seal the filling.

    Step 5

    放入月饼模里,按紧后扣出。Press tightly into a mooncake mould then dislodge the mooncake.

    Step 6

    将冰皮月饼收入冰箱,1-2小时后才享用。Chill the snow skin mooncake in refrigerator for about 1-2 hours before serving.
