蒙古酱炸鸡翼 Mongolian Fried Chicken wings

【材料】
鸡翼4个(1开2)
【腌料】
姜汁1汤匙、青葱1棵、盐1茶匙、胡椒粉1⁄2 茶匙、花雕酒1茶匙、麻油1茶匙
【酱汁】
牛油70克、 淡奶 100毫升、辣椒酱 150克、黑胡椒粉 1⁄2 茶匙、糖1茶匙、盐1⁄2 茶匙、咖哩叶1束(随
意)
【做法】
1. 用腌料腌鸡翼,收入冰箱腌隔夜。(图1)
2. 用热油炸腌鸡翼至金黄色及熟。(图2)
3. 把牛油放入不黏锅里煮溶,然后倒入淡奶,用小火煮滚后加入其它材料,煮至浓稠。(图2-3)
4. 把炸鸡翼放入,兜均即可盛出。(图4)

【Ingredients】
4 pcs chicken wings (wingtip and drumette separated)
【Marinades】
1 tbsp ginger juice, 1 stalk spring onion, 1 tsp salt, 1⁄2 tsp pepper, 1 tsp Chinese cooking wine, 1 tsp
sesame oil
【Sauce】
70g butter, 100ml evaporated milk, 150g chili sauce, 1⁄2 tsp black pepper powder, 1 tsp sugar, 1⁄2 tsp salt,
1 stalk curry leaf (optional)
【Method】
1. Season the chicken wings with marinades and keep in fridge for overnight.
2. Deep fry chicken wings in hot oil until gondlen brown and cooked.(pic 1)
3. Heat non-stick pan with butter until melted; pour in evaporated milk, bring to boil in low heat and
then add in all other ingredients and cook until gravy thicken.(Pic 2-3)
4. Toss in fried chicken wings and coat evenly, dish out.(pic 4)
