蕃茄西芹排骨汤Tomato Celery Ribs Soup

【材料】
猪排骨约350克、蕃茄3-4颗、西芹2-3支(切薄片)、玉米笋1盒、鸿禧菇1盒、纯净水约500毫升、椰油1汤匙、海盐1茶匙

【做法】
1.在蕃茄的底部划上十字,放进纯净水里煮至滚后,去皮,切块,备用。(图1)
2.冷油下锅,将排骨翻炒至表面呈白色。(图2)
3.加入去皮蕃茄,翻炒均匀。(图3)
4.倒入纯净水和下鸿禧菇,盖上盖子,小火煮1个小时。(图4)
5.下西芹和玉米笋,小火继续煮30分钟,以海盐提味,即可享用。(图5)

【INGREDIENTS 】
350g pork ribs, 3-4 tomatoes, 2-3 stalks celery (cut thin slices) ,1 packet baby corn, 1 packet shimeiji mushroom, 500ml water, 1 tbsp coconut oil, 1 tsp sea salt

【METHOD】
1.Cross cut the tomatoes, blanch in hot water bring to boil, remove skin and cut wedges, set aside. (pic 1)
2.Heat some oil in wok, saute pork ribs till change white color. (pic 2)
3.Toss in tomatoes wedges, stir well. (pic 3)
4.Pour in water and mushroom, cover the lid and simmer for 1 hour. (pic 4)
5.Add in celery and baby corn, simmer for another 30 minutes, season with salt, done. (pic 5)
