蕃茄香肠焗蛋饼Salmon & Spinach Pancake

【材料】
三文鱼柳1块、菠菜1大把、莫扎里拉芝士碎2杯、洋葱1/2颗(切丝)、蒜茸1汤匙、海盐1茶匙、胡椒粉1茶匙、墨西哥薄饼皮3张、橄榄油适量

【做法】
1.冷油下锅,将洗净、抹干水份后的三文鱼柳煎熟,起碟,备用。(图1)
2.用煎鱼的油,将洋葱和蒜茸爆香,然后把菠菜炒熟,熄火,备用。(图2&3)
3.将三文鱼柳弄碎后,加入炒菠菜。
4.加入1杯份量的芝士碎,海盐和胡椒粉,拌匀,备用。(图4)
5 取一平底锅,涂上薄薄一层的油,铺上一张墨西哥薄饼。
6.洒上适量剩余的芝士碎,然后抹上三文鱼芝士酱在一半的饼皮上,再盖上另一半墨西哥薄饼。(图5)
7.用相同的方式做完剩余的饼皮,以小火慢煎至2面饼皮微焦即可上碟,享用。(图6)

【INGREDIENTS】
1 salmon fillet, 1 bunch of spinach, 2 cups grated mozzarella, 1/2 onion (juliennes), 1 tbsp chopped garlic, 1 tsp sea salt, 1 tsp pepper, 3 sheets Tortilla, some olive oil

【METHOD】
1.Heat oil in pan, pat dry salmon and sear until cooked. (pix 1)
2.Use the remaining oil to saute onion and garlic until fragrant; and the toss in spinach until cooked, dish out. (pix 2 &3)
3.Crush salmon and toss with spinach.
4.Add in 1 cup cheese, sea salt and pepper, mixes well. (pix 4)
5.Grease a pan lightly and top with a tortilla.
6.Sprinkle the remaining cheese on top, and then spread salmon mixture over half of the tortilla and flip over another half. (pix 5)
7.Repeat steps for the rest of tortilla, and then sear with low heat until both side of tortilla are lightly browned. (pix 6)
