虾球乌达豆腐煲 Prawn & Otak in Tofu Pot

【材料】
滑豆腐1盒(切丁)、明虾200克(去壳尾)、乌达80克、枫柑叶适量(切丝)、指天椒3条(切碎)、蒜茸1汤匙、清水1碗
【调味料】
味精 1⁄2 茶匙、盐少许、糖少许、生粉少许
【做法】
1. 将明虾以少许糖、生粉捞匀腌 1⁄2 小时,然后以清水冲洗数次。(图1-2)
2. 烧热1汤匙油爆香蒜茸,倒入1小碗清水煮滚后,放入乌达、虾球及豆腐煮入味。(图3-6)
3. 加入调味料及勾芡便可熄火盛盘。
4. 面上撒入指天椒碎及枫柑叶后便可上桌。

【Ingredients】
1 box soft tofu (diced),200g shelled prawn, 80gOtak-otak, some shredded kaffir lime leaf, 3 chilipadi (chopped), 1 tbsp chopped garlic, 1 bowl
water
【Seasonings】
1⁄2 tsp MSG, dash of salt, sugar and corn flour
【Method】
1. Marinate prawn with dash of sugar and corn flour for 1⁄2 hour; and then wash under tap water for a few intervals.(pic 1-2)
2. Heat 1 tbsp oil in wok, sauté garlic until fra- grant; then pour in 1 bowl of water, once boiled add in Otak-otak, prawn and tofu and simmer until flavour infused.(pic 3-6)
3. Add in seasoning and thicken with starch.
4. Dish out, sprinkle chilli padi and kaffir lime leaf on top to serve.
