虾酱韭菜花炒鸡丁 Stir-fried Leek Flower with Balacan

【材料】
鸡腿肉400克、韭菜花200克、蒜茸20克、红辣椒茸20克、辣椒粉1茶匙、白米酒少许
【调味料】
幼滑虾酱1⁄2汤匙、糖3茶匙、鸡精粉1茶匙
【做法】
1.将鸡腿肉去骨切丁备用。(图1)
2.将韭菜花头部硬的部分切除,其余切段。(图2)
3.烧热锅放少许油,爆香蒜米茸、辣椒粉及红辣椒茸,加入鸡丁翻炒大概八分熟,放入调味料和韭菜花略炒。(图3-6)
4.灒入白米酒后即可上桌。

【Ingredients】
400g chicken whole leg, 200g leek flower, 20g chopped garlic, 20g chopped red chili, 1 tsp chili powder, drops of rice wine
【Seasoning】
1⁄2 tbsp balacan, 3 tsp sugar, 1 tsp chicken powder
【Method】
1.Debone chicken and cut meat into cubes. (pic 1)
2.Cut leek flower into sections, abandon end parts.(pic 2)
3.Heat some oil in wok, sauté chopped garlic, red chili powder and chopped red chilli until fragrant, toss in chicken cubes and stir-fry until 80% cooked, add in seasoning and leek flower; continue stirfrying
until cooked.(pic 3-6)
4.Drizzle in rice wine before dish out.
