    Step 1

    把白鲳鱼切成数片,然后以盐,糖及米酒腌妥;炸之前沾少许生粉。Slice Pomfret into several pieces. Marinate with salt,sugar and rice wine. Just before deep-fry sprinkle over with some corn flour.

    Step 2

    起锅热油,把白鲳鱼片炸至酥脆后盛出,滴干油。Heat oil in a wok,deepfry Pomfret till very crispy. Dish out and set aside.

    Step 3

    留2汤匙油在锅里,把姜茸和蒜茸爆香。Leave 1-2 tbsp oil in the wok and saute minced ginger and garlic till fragrant.

    Step 4

    倒入混合的酱汁材料,小火煮一会,加入炸白鲳鱼片,搅拌均匀至全部沾上酱汁即可。Pour in all combined seasoning ingredients and cook over low heat briefly. Add Pomfret pieces to the sauce,lightly mix well until every piece of Pomfret is coated with the sauce.

    Step 5

    盛出撒上烤芝麻即可。Dish out and add a sprinkling of sesame seed.
