辣味马铃薯牛油果 Spiced potato Egg Avocado platter

材料
牛油 3 汤匙(分开用)、培根 3 条、A蛋 2 粒(打散)、美国马铃薯 2 粒(切丁)、盐 1 茶匙、食油 1 汤匙、辣椒粉 2 茶匙、牛至草 2 茶匙、黑胡椒粉 ¼ 茶匙、哲达芝士片 2 片、牛油果 1-2 粒(切片)
做法
1 起锅把1汤匙的牛油煮至溶解,然后加入鸡蛋炒至软碎后盛入碗里,放入烤炉保温。(图1-2)
2 用平底锅把火腿肉煎熟后放入盘里。(图3)
3 将2汤匙牛油加热溶解,然后放入马铃薯,炒5分钟,然后加入盐和额外一汤匙油,再继续炒5分钟至熟透。(图 4)
4 加入辣椒粉牛至草及黑胡椒粉,再炒2分钟。
5 把炒碎蛋,火腿及马铃薯都排入碟子上,然后铺上牛油果片。(图5-8)
6 配辣椒酱或原味享用。

INGREDIENTS
3 tbsps butter,(divided), 3 strips bacon, 2 large “Grade A” eggs (beaten lightly), 2 russet potatoes (diced small cubes), 1 tsp salt, 1 tbsp oil, 2 tsps paprika, 2 tsps oregano, ¼ tsp black pepper, 2 slices cheddar, 1-2
avocados (sliced)
METHOD
1 Heat 1 tbsp of cold butter on the skillet until melts, add the eggs and cook until soft scrambled. Place
the eggs into a bowl and set in the oven to keep warm. (pic 1-2)
2 Pan fry bacon, remove, place onto the platter. (pic 3)
3 Add the remaining 2 tablespoons of butter into the skillet and once it melts, add the diced potatoes,
stir-fry for 5 minutes, then add salt and another tablespoon of oil. Continue to stir-fry for another 5
minutes, or until the potatoes are cooked through. (pic 4)
4 Add the paprika, oregano and black pepper, stirfry for 2 minutes.
5 In the platter, place the scrambled eggs, bacon, potatoes then top with sliced avocado. (pic 5-8)
6 Serve with some chilly sauce on top or just plain.
