酥皮嫩鸡球Crispy Chicken Balls

【材料】
鸡腿肉120克、现买酥皮4片、鸡蛋1粒(打散)

【腌鸡料】混合
细糖1/4茶匙、蒜茸1茶匙、盐少许、蛋液2汤匙、牛奶2汤匙、粟粉1茶匙

【做法】
1.鸡腿切成块状加入腌料拌匀,置放30分钟备用(图1)
2.酥皮切割成圆形,然后包入一块鸡球肉,用手指摺成圆粒状,重复此作法至材料用完。然后表层搽上一层蛋液。(图2-4)
3.热锅,倒入油加热后放入鸡球,以中火炸至皮酥,呈微黄色便可捞出沥油。(图5-6)

【Ingredients】
120g chicken whole-leg, 4 sheet pastry, 1 beaten egg

【Condiments】
1/4 tsp castor sugar, 1 tsp chopped garlic, dash of salt, 2 tbsp egg sauce, 2 tbsp milk, 1 tsp corn flour

【Method】
1.Cut meat into chunks and marinate with condiments for 30 minutes. (pic 1)
2.Cut pastry into round sheet, wrap in 1 piece of meat, use finger fold into round shape; repeat steps until ingredients used up. And then spread egg sauce over. (pic 2-4)
3.Heat oil in wok, deep fry with medium heat until crispy and golden brown. (pic 5-6)
