    Step 1

    茄子切厚斜片、浸泡盐水12-15分钟后滴干。Cut brinjals into thick slanting slices. Soak in salted water for 12-15 minutes, drain.

    Step 2

    起锅热2-3汤匙油,小火把茄子煎30-40秒钟,盛出后加入蒜茸、指天椒及辣椒干,炒香后加入咖哩叶,继续炒至香味溢出,油不够可添加。Heat 2-3 tbsp oil in a wok and sauté brinjals briefly over low heat for 30-40 seconds. Dish out and sauté chopped garlic,bird’s eye chilies and dried chilies followed by curry leaves. Fry till aromatic. Add a little more oil if needed.

    Step 3

    将茄子回锅,再加入调味料,炒至茄子吸收了酱汁即可盛出。Add in prefried brinjals and seasoning. Stir-fry briefly until the brinjals have taken in the sauce ingredients. Dish out and serve at once.
