Step 1
烧热2汤匙油加入马铃薯丁、洋葱丁、红辣椒碎和葱花炒香，再加入调味料拌匀，盛起待冷。Heat 2 tbsp oil in wok，sauté potato，onion，red chili and spring onion until fragrant；toss in seasoning and dish out and let cool.
Step 2
加入鸡蛋，充分搅匀。Mix in egg sauce and stir until well mixed.
Step 3
准备一个不粘底的平底镬，抹上适量油预热，加入烘蛋料，加盖用慢火烘到鸡蛋熟透，即可盛起装饰享用。Heat 1 non-stick pan with some oil，pour in mixture and sear until cooked，dish out.
