    心得交流站 : 棉绳记得不要缠得太紧,不然粽子在煮的过程可能会因为糯米发涨而爆破,即使不破,做出来的粽子也会有"腰",不够方正,就没那么好看。

    Step 1

    糯米滴干水后以盐调味。Drain soaked glutinous rice and season with salt.

    Step 2

    把蓝花泡水10分钟,然后过滤,和50克糯米浸泡2-3小时。Infuse bunga telang with water for 10 minutes. Strain liquid and set aside. Put 50g glutinous rice,bunga telang liquid together to soak for at least 2-3 hours.

    Step 3

    馅料做法:起锅热油,把蒜茸和葱头茸爆香,加入花肉、香菇、冬瓜条、虾米及调味料,炒均后继续煮3-4分钟,必要时加少许清水,然后盛出。To prepare filling :Heat oil and saute shallots and garlic till aromatic. Add in pork belly,mushrooms,candied melon,dried prawns and seasoning. Stir-fry well then allow to cook for 3-4 minutes. Add a little water as required. Dish out and leave to cool.

    Step 4

    粽子包法:取2片粽叶,摺成漏斗状,放入1片班兰叶,1汤匙蓝色糯米和2汤匙白色糯米,然后再放入1汤匙馅料,再以少许白色糯米和蓝色糯米覆盖。To wrap dumpling:Fold 2 bamboo leaves into a cone. Add a piece of pandan leaf,1 heaped tbsp of blue coloured rice and 2 tbsp of white glutinous rice. Add 1 heaped tbsp of the filling. Cover with more white glutinous rice and add a little blue colored rice over again.

    Step 5

    把粽叶折摺后以草绳绑紧。Fold into a dumpling and secure with hemp string to hold securely.

    Step 6

    放入煮滚的大锅水内,加盐以中火煮2小时即可。Put prepared dumplings in a pot filled with hot water. Add salt and cook for 2 hours on medium heat.
