香辣炸虾 Deep-Fried Spicy Prawns

【材料】
中大虾12只、咖哩叶2束、姜丝2汤匙
【腌料】混合
柠檬汁1汤匙、鱼露1汤匙、白糖1⁄2茶匙、剁碎香茅、蒜茸、葱头茸、辣椒粉及肉类咖哩粉各1茶匙
【干料】
面粉2汤匙
【面糊】混合
普通面粉4汤匙、薯粉2汤匙、粘米粉1汤匙、发粉4茶匙、盐1⁄2茶匙、鸡粉1⁄2茶匙、油3-4茶匙、清水4-5
汤匙
【做法】
1. 把虾洗净去壳留尾,切成蝴蝶状,加入腌料腌匀备用。(图1-2)
2. 把虾沾干料后再沾上面糊,放入热油中炸至酥脆即可。(图3-5)
3. 把咖哩叶和姜丝一起放入热油里炸至酥脆后盛出,当装饰料。 (图6-7)

【Ingredients】
12 medium large prawns(shelled leaving tails intact), 2 stalks curry leaves, 2 tbsp shredded ginger
【Marinade】combine
1 tbsp lemon juice, 1 tbsp fish sauce, 1⁄2 tsp sugar, 1 tsp minced lemongrass, 1 tsp minced garlic, 1 tsp minced shallots, 1 tsp chilli powder, 1 tsp meat curry powder
【Dry ingredients】
2 tbsp plain flour
【Batter】combined
4 tbsp plain flour, 2 tbsp tapioca flour, 1 tbsp rice flour, 4 tsp baking powder, 1⁄2 tsp salt, 1⁄2 tsp chicken stock powder, 3-4 tsp oil, 4- 5 tbsp water
【Method】
1. Cut prawns butterfly style then season with marinade ingredients. (pic 1-2)
2. Coat prepared prawns in dry flour ingredients followed by crispy batter ingredients, deep fry in hot oil until crispy. (pic 3-5)
3. Deep-fry curry leaves and shredded ginger in hot oil until fragrant and crispy. Dish out and put aside as garnishing. (pic 6-7)
